And once again, Burp Castle would be a lot cooler if it actually had a legit monk to tell everyone to shut it. Then again, the overall concept, a bar where you can’t talk, just seems ridiculous, especially to a loudmouth like myself.

ok here’s the deal

a) don’t overmix, even or especially when using mix. it should be somewhat lumpy.

b) your pan must be hot; medium high heat to start with for sure! you may have to back it down as you go on, but that shit should be cooked really fuckin’ fast. if you have a nonstick pan, you may notice butter helps; on a cast iron/griddle/non-nonstick environment, you’re going to need some kind of grease to prevent stickage and destruction.

so by not overmixing, i mean you only stir it enough to keep it together. add water very slowly. the more water, the more crepe-like your finished pancakes will be.

when cooking, you wait until you start seeing bubbles on the surface of the cake – once it looks like there’s more than a few, flip it. once you figure out what the timing is for your pan/heat/mix, you’ll avoid overbrowning.
